Qatayef is one of the most famous traditional Arabic sweets, especially prepared during the holy month of Ramadan. It consists of dough stuffed with various fillings, such as cheese, cream, walnuts, and pistachios. It can be eaten fried, grilled, or raw. Most people enjoy it after Iftar, while some prefer to have it before the Iftar meal.

Instructions

Place the following ingredients in a bowl (flour, semolina, sugar, baking powder, and water).
Mix all the ingredients well (you can use a blender).
Let the dough rest to rise for one full hour.
Once the dough has risen, heat a non-stick pan on the stove until it's hot.
Put an appropriate amount of the qatayef dough on the pan and let it cook until the bottom is golden brown.
Then, remove it from the heat and let it cool (the qatayef should be browned only on the bottom, while the top remains uncooked).
Prepare the cheese filling and grate the cheese.
Place a teaspoon of the cheese filling on each qatayef.
Continue until all the dough is used, making sure to seal the edges well to prevent the filling from escaping.
If you want to fry the qatayef, place vegetable oil in a deep pan on the stove and heat it until it’s hot.
Then, add the qatayef pieces and fry them until they are golden brown.
If you want to grill the qatayef, place them on a grilling tray and brush them with vegetable oil on all sides.
Then, put them in the oven until they turn golden.
Pour cold syrup over the hot qatayef and garnish with a little ground pistachio.
Serve the qatayef with cheese hot.
